I know that cutting your sugar intake isn’t easy, so it helps to have some healthier sweet recipes sweetened with natural sweeteners like dates. I love that these peanut butter cookies are so easy to make and really yummy. These can be a great substitute for regular peanut butter cookies and kids like them too!

Peanut Butter Cookies (sweetened with dates)

Makes about 1-dozen cookies
Gluten free/Dairy free

1 cup natural peanut butter (with peanuts and salt only)
1/2 cup pitted dates
1 egg

Preheat oven to 350 degrees. Grease cookie sheet with coconut oil. Add peanut butter and dates to food processor and process until dates well-incorporated into peanut butter. Add eggs, and process until forms a sticky dough. Form dough into 1-1.5-inch balls. Place on cookie sheet, and flatten each ball using a drinking glass. Bake at 350 degrees for about 10 minutes.
